“Don’t buy those. I can make better ones at home.”
Usually, I’m the one saying that.
But this time, it was Jamie…..and he was preventing me from buying Red Velvet Oreo’s.
Here’s exactly how he made them better,
For starters; he cut them into heart shapes.(All together now…”AWWWWWWW”)
For the cookies:
- 1 Cup of Flour
- 1 TBS Cocoa Powder
- 1/4 Tsp Baking Soda
- Pinch of Salt
- 6 TBS Soft Butter
- 3/4 Cup Powdered Sugar
- 1/2 Tsp Vanilla
- Few Drops of Red Food Coloring
Shift the dry ingredients together. In a mixer, mix the butter, sugar and vanilla ’till smooth. Slowly add in the dry ingredients until completely combined, then add the food coloring. It’s a pretty dry dough, so press it together with your hands, roll it in wax paper, and let it chill for about 2 hours in the ‘fridge.
When it’s cooled, roll the dough to about 1/4 inch thick and cut out the heart shapes with a cookie-cutter. Lay them on Silpats (or parchment paper) and bake at 350 for about 8-10 minutes until crisp.
For the filling:
- 4 Ounces of soft Cream Cheese
- 3/4 Cup of Powdered Sugar
- 1/2 Tsp Vanilla
Mix everything together in an electric mixer until smooth. Pretty easy.
When the cookies are completely cooled, spread the filling on a cookie and press another one on top to make a “sandwich”.
Then simply share them with someone you love.
Jamie was right.
Crispy & creamy at the same time.
They are much better than the store-bought Oreo’s.
…..and not just because they were made with love.
or out of spite.
